Super Bowl Nachos

I could not care less about sports. That being said, Super Bowl snacks are delightful. Chicken wings, spinach dip, fried mozzarella sticks, chips and salsa- I love them all. But nachos are especially delicious. I must note that these are not just any nachos, they are nachos that befit the name of Super Bowl Nachos. They are topped with a delicious, spicy ground beef mixture, topped with loads of cheese, and sprinkled with diced tomatoes and avocados. I add a little bit of crisp romaine in an attempt to be healthyish, but it does actually provide a nice contrast to the spicy beef mixture. I place lime wedges alongside the nachos so everyone can drizzle a refreshing bit of lime juice onto their individual serving of nachos.

Super Bowl Nachos
Serves 6-8
Ingredients:
- 1 tablespoon olive oil
- 1 lb. ground beef
- ½ small onion, chopped small
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon Hungarian paprika
- 1 teaspoon dried oregano
- ½ teaspoon cumin
- Salt and Pepper
- 15 oz. can black beans, drained and rinsed
- 16 oz. bag blue corn chips
- 12 oz. package shredded Mexican cheese blend
- 1 cup shredded romaine
- 2 scallions, sliced thin
- 2 plum tomatoes, diced
- 2 avocados, peeled, seed removed, and diced
- 1 lime, sliced into wedges
Directions:
- In a large stock pot, heat 1 tablespoon olive oil over med-high heat. Add the ground beef and cook 6-8 minutes until cooked through. Add onion and cook 6-8 minutes until onion is soft and translucent. Add garlic, chili powder, paprika, oregano, cumin and cook an additional 30 seconds. Add salt and pepper, to taste. Remove from heat. Stir in black beans.
- Place nachos on a rimmed baking sheet. Top with ground beef mixture. Sprinkle with cheese. Place under the broiler and cook until cheese is melted. Top nachos with romaine, scallions, tomatoes, and avocados. Squeeze lime wedges over nachos and serve wedges alongside nachos. Serve immediately while the cheese is beautifully melty and the nachos are warmed.
