Everything is set on top of a big bowl of Romaine lettuce, sweet cherry tomatoes, and pickles. Plus, it feels a bit leaner without the heavy burger bun. But I promise you won’t miss it! Method
- For the sweet potato fries: Toss the sweet potatoes with 1 tablespoon olive oil and the semolina and place on a rimmed sheet tray. Bake in a 400 degree oven for 15-20 minutes, until tender. For even crispier potatoes, broil on medium for a couple minutes but keep an eye on them so they don’t burn.
- For the burger sauce: Meanwhile, combine, the mayo, mustard, ketchup, pickle jar juice, sweet paprika and a sprinkle of garlic powder along with salt and pepper, to taste. Set aside.
- For the burger bites: In a non-stick sauté pan, heat 1 tablespoon of olive oil over medium-high heat. Break the ground beef into bite-sized pieces and cook undisturbed, until nicely browned on one side. Sprinkle with salt, pepper, and garlic powder. Flip small burger bites and brown on the other side, then remove to a paper towel lined plate.
- To assemble: Divide the romaine lettuce, cherry tomatoes, pickles, and red onion between two plates. Top with the sweet potato fries and the burger bites. Drizzle with the burger sauce and serve!
