Yogurt Parfait with Homemade Strawberry-Grand Marnier Jam and Cinnamon Granola

This super simple make ahead breakfast is high protein and absolutely delicious. Vanilla Greek yogurt is swirled with homemade strawberry jam, which just so happens to have been hit with a dash of Grand Marnier. The parfait is topped with homemade granola which is filled with cinnamon, pecans, almonds, and walnuts. Make the granola and jam ahead of time and you’ll have a quick and easy to assemble breakfast any day of the week. This recipe makes a small batch of strawberry jam but it could easily be doubled. It lasts in the fridge for up to 5 days and any leftover can be frozen.

Ingredients
  

  • 1/2 cup Vanilla Greek Yogurt
  • 1/2 cup Homemade Granola Recipe link below
  • 1 cup chopped strawberries
  • 1/3 cup granulated sugar
  • 2 tablespoons water
  • 1 tablespoon Grand Marnier liquor optional
  • Raspberries for topping

Method
 

  1. To make the jam: combine the strawberries, sugar, and water in a small saucepan over medium-high heat. While cooking, break up strawberries with an avocado masher or a fork. Lower the heat and cook until thickened, about 5 minutes. Off heat, stir in 1 tablespoon Grand Marnier and let cool. Store in the fridge for up to 5 days.
  2. To assemble: Spoon 1/4 cup yogurt into a decorative glass or small serving dish. Top with 1 tablespoon of jam and sprinkle with half the granola. Repeat with another 1/4 yogurt, tablespoon of jam and remaining granola. Top with raspberries.
